The Rupestre Red Wine from Bodegas Santa Cruz de Alpera presents us with this Red Wine from D.O Almansa (Spain) made from the Garnacha Tintorera grape variety. Aging: After undergoing malolactic fermentation, Rupestre Red Wine is aged in a selection of new French oak barrels of 500 liters with very fine grain so that the wine remains aging for fourteen months. Harvest and Production: The vineyards from which Rupestre Red Wine comes are strictly selected by the winery team where most of the vineyards are at least 45 years old, have low yields and where vine health is carefully maintained to achieve grapes with maximum quality and expression for winemaking.
The harvest is carried out by transporting the clusters in 100 kg boxes with rigorous selection upon entering the winery. For its production, 100% Garnacha Tintorera grape variety is used, which provides uniqueness to the wines, as well as structure and color. For vinification purposes, the traditional method is carried out with grape destemming and fermentation takes place in stainless steel tanks with air/nitrogen injection. Regarding fermentation processes, the temperature is around 32ºC where the must is in contact with its skins for 16 days. Garnacha Tintorera: Garnacha Tintorera is a late-ripening variety but with good productivity and yield. It is a variety with colored pulp and skin that is normally used for blending with other red wines, vinified separately to enhance color, give depth and roundness. It gives great results when blending with Monastrell and Syrah grape varieties. This variety can be found mainly in: D.O Almansa, D.O Yecla, D.O Jumilla and D.O Valencia, D.O Valdeorras to Castilla de la Mancha and Cataluña.
