The White Wine Viore Verdejo Sobre Lías from Bodegas Viore presents us with this White Wine from D.O Rueda (Spain) made with the Verdejo grape variety. Vineyard and Winemaking This White Wine Viore Verdejo Sobre Lías is made with grapes from a plot called “Los Tordos”, located in the Rueda area. This is a two-hectare vineyard situated in the upper part of a slope at 770 meters altitude. Its soils are poor and infertile which naturally causes reduced vineyard yield, and where the clay-limestone profile with abundant surface pebbles brings minerality to the wines. These vineyards are flanked by pine forests and a diversity of herbs and flowers that provide a balsamic character. For the winemaking process, the Verdejo variety grapes are harvested very early in the morning and later to provide higher alcohol content that will contribute complexity and character to the wine. Once in the winery, controlled fermentation takes place in small capacity tanks: 10,000. Once the fermentation process ends, part of the wine remains on its lees for a period of 7 months with periodic stirring and the other part will mature in new 500-liter French oak barrels for a period of 5 months.
