The grapes come from very old, dry-farmed vineyards located in the Monte Alto and La Sarda plots. These vineyards are situated on very arid soils of slate and reddish earth terraces, on the slopes of the Iberian Cordillera, at the foothills of Moncayo. The low production, less than 1 kg per vine, ensures a high concentration of flavors and quality in each cluster.

The harvest is carried out manually during the first week of October, ensuring that the grapes are picked at their optimal ripeness point.

The winemaking process follows traditional methods, with cold maceration for 24 hours to obtain fresher fruit.

Fermentation takes place at 26°C with temperature control, followed by a ten-day maceration to extract the best tannins and flavors. Once the desired objectives are achieved, bleeding and pressing proceed. The Garnacha Single-Varietal Wine is aged in new French oak barrels for four months. During this period, malolactic fermentation occurs in contact with its own lees, which provides greater complexity and smoothness in the mouth.
