Bodega Moselland presents the Castillo San Diego Rosé Wine, originating from Andalusia (Spain). Castillo San Diego rosé wine is a wine from the Jerez region in Andalusia, Spain. It is a wine made with red grapes and is characterized by its freshness, smoothness and intense pink color. This rosé wine is the result of a careful selection of Tempranillo grapes, grown in the vineyards near the San Diego castle, which is located in the heart of the Marco de Jerez.

The grapes are hand-harvested and selected to ensure the quality of the final product.

The production process of Castillo San Diego rosé wine begins with cold maceration of the grapes for several hours, which allows extracting the aromas and flavors from the grape skins. After maceration, the grapes are gently pressed and fermented in stainless steel tanks at a controlled temperature of 16-18°C for a period of 10 to 15 days. During fermentation, periodic pump-overs are performed to obtain greater color and aroma extraction. Once fermentation is finished, the wine is transferred to another tank where a second malolactic fermentation takes place, which helps to soften the wine and give it greater complexity. After malolactic fermentation, the wine is filtered and bottled. Castillo San Diego rosé wine is a product of Barbadillo winery, one of the oldest and most prestigious wineries in the Jerez region. Founded in 1821, the winery has been a pioneer in producing quality wines in the region and has maintained its commitment to quality and tradition for more than two centuries.
