The harvest was carried out manually, carefully and in 18-20 kg boxes. The grapes were stored in a climate-controlled chamber until the next day for pressing without destemming. The resulting must went through a 24-hour static settling process before starting fermentation with native yeasts selected from the vineyard. Part of the wine, around 30%, was introduced into 500-liter French oak barrels, while the rest remained in tank. The lees were kept in suspension for 7 months, with manual bâtonnage in the barrels to enrich the wine. After this process, a blend of both aging methods was made to achieve the desired flavor profile. Then, the wine was clarified and bottled, continuing its aging in bottle for approximately 8-12 additional months before going to market.
