“Varron Cuvée Especial Verdejo” is an exceptional quality white wine that stands out for its aging in French oak and its commitment to sustainability and organic production, also certified as vegan. From the Denominación de Origen Rueda, in the Castilla y León region of Spain, this wine represents the excellence of the Verdejo grape.

The winemaking process begins with the careful selection of grapes from the vineyards of Nava del Rey, cultivated under strict organic farming practices and certified by the Consejo de Agricultura Ecológica de Castilla y León. Planted on terraces with river stones near the Duero River, these vineyards benefit from gravelly soils that facilitate water drainage and reduce the risk of fungal diseases. The vinification of “Varron Cuvée Especial Verdejo” is carried out in stainless steel tanks, using the yeasts present on the grape skins. After fermentation, the wine ages for 12 months in 500 and 600-liter French oak foudres, adding complexity and structure.

Stabilization with bentonite, cold settling, and filtration through natural cellulose plates guarantee the purity and quality of the wine. Sustainable viticulture is practiced with natural treatments, such as herbal infusions and broths, avoiding herbicides and using cultivation techniques for weed control. This approach helps maintain and increase biodiversity in the vineyard, allowing the grape to express its characteristics authentically.

The manual harvest of the finest grapes was carried out in early September 2019, cooling the grapes before pressing.
