The Red Wine Pago de los Capellanes Un Sueño en las Alturas is much more than a wine; it is an authentic expression of the extraordinary environment in which it is cultivated. Located in the high lands of the extreme south of Ribera del Duero, this wine benefits from the freshness and special energy that only altitude can provide. The Tempranillo vines (tinto fino), aged between 50 and 60 years, are scattered across a mosaic of wild slopes and hills, characterized by reddish soils and ancient geology that imparts a unique mineral identity to the wine. This environment of rich biodiversity in the municipalities of Fuentenebro, Pardilla, and Honrubia de la Cuesta creates ideal conditions for cultivating high-quality grapes. The vineyard is cultivated respectfully with the environment, using limited tillage methods and careful manual work to control vegetation. Native species such as junipers, sabines, and holm oaks are integrated to promote vineyard health and its integration into the surrounding ecosystem.

The production of Un Sueño en las Alturas is carried out with great care. After cold pre-fermentation maceration, fermentation takes place in temperature-controlled stainless steel tanks, followed by spontaneous malolactic fermentation in French oak foudres.

Aging for one year in these same foudres and subsequent bottling without additional clarifications or stabilizations reflect the purity and integrity of the wine. With an alcohol content of 15% Vol., Un Sueño en las Alturas has an aging potential in bottle of up to 15 years, evolving positively over time.
