Pío del Ramo presents the White Wine Verdejo The Cat Wine, a wine crafted under the Denominación de Origen Vino de la Tierra de Castilla (Spain), from 100% Verdejo grapes, sourced from vineyards established on calcareous and sandy soils, poor in organic matter, ideal for obtaining fresh, expressive wines with marked Mediterranean personality. The vines are trained on a two-arm trellis system, which allows proper aeration of the clusters and precise control of ripening. When the grapes reach their optimal maturity point in late summer, harvesting is carried out at dawn, taking advantage of the cooler temperatures so the grapes arrive fresh at the winery and preserve their varietal aromas intact.

The winemaking is carried out with special care, seeking to respect the identity of the Verdejo grape to the maximum and adapt it to the Mediterranean character typical of the area. After destemming and gentle pressing, the must ferments in stainless steel tanks at controlled temperature, thus preserving the freshness and aromatic intensity of the wine. Once alcoholic fermentation is finished, the wine remains 3 months on its fine lees in the same stainless steel tank. This work on lees provides greater complexity, unctuousness and volume in the mouth, balancing the natural freshness of Verdejo with a more gentle and enveloping texture. In the glass, Verdejo The Cat Wine shows bright and clean, with intense aromas of white fruit, citrus and herbaceous notes, accompanied by subtle tropical hints.
