The winemaking of this wine begins with a manual harvest in 15 kg boxes, allowing for precise selection of the best clusters. Only fruits that have reached their optimal ripeness point are chosen, ensuring the wine has the ideal balance between concentration and freshness. Once the grapes arrive at the winery, gentle destemming and pressing proceed to preserve the quality of the must.
The maceration process extends for 20 days, giving the wine greater extraction of color, aromas and tannins, characteristics that define its structure and complexity. The Red Wine 1270 a Vuit is aged in French and American oak barrels for 12 months, adding notable depth and subtle influence of spiced and toasted notes characteristic of wood. This balanced aging allows the wine to develop a robust character without losing its natural elegance. After this process, before bottling, the wine undergoes gentle filtration and sulfur stabilization to ensure its purity and longevity. Once bottled, the wine must rest in the cellar for at least 18 months, allowing its components to integrate harmoniously, achieving greater roundness in the mouth.
