The Cueva del Chamán Roble Red Wine from Bodegas Santa Cruz de Alpera presents us with this Red Wine from D.O Almansa (Spain) made from the Garnacha Tintorera grape variety. Crianza After undergoing malolactic fermentation, the Cueva del Chamán Roble Red Wine is placed in French oak barrels, 25% new, 300-liter capacity, to carry out its aging for a minimum of four months. Harvest and Production The vineyards from which the Cueva del Chamán Roble Red Wine comes are strictly selected by the winery team, where most are very old vines with low yields, carefully maintaining their health. By focusing on these three factors, they achieve grapes of maximum quality. The harvest is carried out using 100kg crates. For its production, 100% Garnacha Tintorera grape variety is used, which brings singularity to the wines, as well as structure and color. For vinification purposes, the traditional method is carried out with destemming of the grapes and fermentation takes place in rotating horizontal tanks. Regarding fermentation processes, the temperature is around 28°C where the must is in contact with its skins for twelve days. Finally, after barrel aging, the wine undergoes microbial filtration to preserve all its characteristics. Garnacha Tintorera Garnacha Tintorera is a late-ripening variety but with good productivity and yield. It is a variety with colored pulp and skin that is normally used for blending with other red wines, vinified separately to enhance color, give depth and roundness. It gives great results when blended with Monastrell and Syrah grape varieties. This variety can be found mainly in: D.O Almansa, D.O Yecla, D.O Jumilla and D.O Valencia, D.O Valdeorras to Castilla de la Mancha and Cataluña.
