Once the grapes arrive at the winery, destemming and gentle pressing take place before beginning fermentation in stainless steel vats, a method that preserves the fruit aromas and natural freshness of the grapes. This approach ensures that the distinctive characteristics of each variety are expressed in a balanced and harmonious way. The next step is bottling, which is carried out following a very careful process. Before bottling the wine, gentle filtration is performed to ensure its purity and clarity. What’s particular about this wine is that its bottling is done on the most favorable date to maximize the development of its aromas and organoleptic qualities, following the lunar calendar. This traditional method, respectful of natural cycles, seeks to enhance the wine’s best characteristics, resulting in a unique sensory experience.
