Pío del Ramo presents the Pío Roble Red Wine from the Protected Designation of Origin Jumilla (Spain), a wine crafted from Monastrell, Syrah and Cabernet Sauvignon varieties, sourced from certified organic cultivation. This red represents the freshest and most accessible expression of the winery, without renouncing the Mediterranean character and identity of the Jumilla terroir.
The vineyards are situated on soils poor in organic matter, mainly limestone and sandy for the Syrah and Monastrell varieties, while the Cabernet Sauvignon is cultivated in plots with a greater presence of clay. This diversity of soils allows for balanced grapes, with good concentration and a complex aromatic profile. The Monastrell is cultivated in bush vines, respecting the tradition of the area, while the other varieties are trained on trellises, favoring uniform ripening.
The harvest is carried out manually, with a double selection: first in the vineyard and subsequently in the winery, guaranteeing that only grapes in optimal condition become part of the wine.
Alcoholic fermentation takes place in stainless steel tanks at controlled temperature, preserving the primary aromas of the fruit.
Maceration extends for approximately 15 days, achieving a balanced extraction of color and tannins, without losing freshness or smoothness. After fermentation, the wine undergoes aging for 4 to 6 months in French and American oak barrels, where it acquires complexity, structure and spiced notes, always maintaining the protagonism of the fruit. This brief aging provides roundness and elegance, making this red a versatile and very pleasant wine. In the glass it presents an intense cherry red color with violet reflections.
On the nose, aromas of ripe red and black fruit stand out, accompanied by spiced notes, vanilla and light toasted notes from the barrel.
On the palate it is a dry, balanced and flavorful wine, with soft tannins, good acidity and a persistent finish that invites continued drinking. The Pío Roble Red Wine is ideal to accompany grilled meats, cured meats, rice dishes, pasta, tapas and semi-aged cheeses. A wine designed for everyday drinking, but with the quality and organic seal that characterizes Pío del Ramo.
