The winemaking process of Son Vich Esencia is carried out with maximum attention to detail.
The grapes are fermented at high temperature and macerated for 40 days in oak tanks, allowing for deep extraction of intense flavors and aromas. After fermentation and maceration, the wine remains in contact with its lees for 8 months, without additives or artificial interventions. This aging on lees provides greater complexity and structure to the wine, enriching its aromatic profile and mouthfeel texture. Subsequently, Son Vich Esencia ages for 12 months in French oak barrels, contributing to its elegance and sophistication. The wine continues its evolution in bottle for 20 months, allowing the flavors and aromas to integrate and harmonize sublimely. OPTIMAL SERVING TEMPERATURE: 17 – 18°C after decanting.
