The White Wine Ossian belongs to VT Castilla y León, crafted through organic viticulture with 100% old vine Verdejo fermented and aged in French barrels in the cordel de las merinas. The vineyard where Verdejo is cultivated comes from exceptional small estates.
The grapes come from centenary old vines planted in bush formation, with sandy soils characteristic of the Nieva area (Noret de Segovia). Elaboration: Manual harvest in 15 kg boxes. Rigorous inspection on sorting table. Whole clusters, without destemming and very gentle pressing, with low yield, using only the free-run must. Fermentation with native indigenous yeasts. After alcoholic fermentation, the wine has remained in French barrels – 40% new, 30% one wine old, and 30% two wines old – to complete nine months of Burgundy-style aging, with bâtonnage on its lees. It is recommended to let the wine rest for 48 hours after transport. Additionally, it is advised not to serve the wine excessively cold, between 12ºC – 14ºC.
