The Pago de los Capellanes reserva Red Wine is made with Tinto Fino and Cabernet Sauvignon. It belongs to the D.O. Ribera del Duero. After exhaustive monitoring, the harvest date is decided based on grape maturity, taking the varieties independently to 20,000-liter tanks to carry out fermentation separately. The vineyard yield is less than 5,000 kg/ha. The fermentation process begins with cold pre-fermentation for 6 days below 14°C for 30 days and is racked by bleeding without press addition. Malolactic fermentation is slow and restful without bacterial addition, at 20°C for 28 days. This wine has an 18-month aging in new French oak barrels. Subsequently, blending is carried out and it is bottled without cold treatment, clarifying, or filtering. It is recommended to serve at a temperature between 16° and 18°C.
