The grapes, from vineyards over twenty years old, are cultivated under sustainable agriculture principles, with a transition towards organic certification underway. The elaboration of this wine is a meticulous process that seeks to highlight the unique expression of each grape variety. Spontaneous fermentation takes place in stainless steel tanks and 500L plastic tanks, with must maceration for 6 to 8 days, followed by slow pressing for 12 hours. Final fermentation and aging are carried out in 1100L polyethylene eggs and 225L French oak barrels that are three to four years old.
