San Cucufate Monasterio

From Bodegas San Cobate, belongs to D.O. Ribera del Duero and is made with 100% Tinto Fino grape variety. Located in Gumiel del Mercado (Burgos) at over 860 meters altitude. South-facing slope (1.6 hectares), with north-south planting orientation. It’s a vineyard surrounded and protected by oak trees and local vegetation. The soil is clay-limestone, very poor due to slope erosion, and limestone bedrock emerges in the highest area. Vinification and Aging: Production is carried out with meticulous selection of clusters in the vineyard. In the winery, grapes are destemmed and gently crushed, maintaining a small portion of whole clusters to begin alcoholic fermentation in concrete tanks with daily pump-overs. Malolactic fermentation takes place in these same tanks. The objective is to obtain wines of great varietal expression that subsequently begin aging in barrels of various uses and finally age in larger volume wooden tanks, seeking to achieve gentle aging that offers us a broad, powerful and intense wine.
