Tierra Rubia Red Wine

The Red Wine Tierra Rubia belongs to the D.O. Mondejar, made with Syrah grape variety, harvested from vines over 20 years old. The climate where the grape is cultivated is temperate Mediterranean, with warm summers and cold winters. The vineyard has red soil over clay-loam sediments, with gravel. It also corresponds to an undulating landscape, with gentle slopes, deep soil and a sandy clay-loam texture with good permeability and aeration, sparse stoniness, limestone, small alkaline size, also poor in organic matter and phosphorus, but rich in potassium. Winemaking: This wine undergoes a cold cryomaceration process at 7°C in order to achieve greater concentration of aromas and perfect dissolution with tannins. Additionally, subsequent fermentation at 18-20°C in concrete tanks and malolactic fermentation in oak barrels.
