Betola The Cat Wine

Pío del Ramo presents us with the Rosé Wine Bétola The Cat Wine from the Protected Designation of Origin Jumilla (Spain), crafted from 100% Monastrell grapes from certified organic vineyards, established on calcareous sandy-loam soils, poor in organic matter, characteristic of the area and fundamental for expressing the natural freshness of the variety. The vines are worked using double Royat cordon pruning, a system that allows balancing production and improving grape quality, ensuring homogeneous ripening.

The harvest takes place in early September, at the optimal moment, with the aim of preserving the freshness, natural acidity and fruity character of the wine. In the winery, 80% destemming is carried out followed by direct pressing, which allows obtaining a clean and delicate must. After careful clarification, the must ferments at low temperature, preserving the primary aromas of Monastrell and achieving an elegant and expressive aromatic profile. Once alcoholic fermentation is finished, the wine remains three months on its fine lees, a process that provides greater unctuousness, volume in the mouth and aromatic complexity, without losing freshness. This work on lees is key to giving the rosé structure and a silky texture, differentiating it from lighter rosés. In the glass, the Rosé Bétola The Cat Wine presents an attractive pale pink and bright color.

On the nose, aromas of fresh red fruits stand out, such as strawberry and raspberry, accompanied by delicate floral notes.

On the palate it is fresh, balanced and enveloping, with well-integrated acidity, smooth passage and a pleasant and persistent finish. This rosé wine is ideal for accompanying rice dishes, salads, pasta, fish, seafood and Mediterranean cuisine, as well as for enjoying alone in informal moments.
