This wine is made 100% with the Verdejo variety existing in the southern area of León, Vino de España. Deep, acidic, very poor soils, with clay-loam texture, containing a large amount of gravel and pebbles. Harvest: manual in 20kg boxes, processed on selection table. Winemaking: Cold pre-maceration for 8 hours in pneumatic press at 8ºC. Bleeding and settling in stainless steel for 24 hours at 8ºC. Alcoholic fermentation at 14ºC until reaching 60 g/L of residual sugar. Fermentation stopped by cold at -4ºC. Alcohol content: 9.5%.
