The White Wine Finca Constancia Parcela 52 with 100% Verdejo grape variety belongs to Finca Constancia winery (González Byass). For the production of this «White Finca Constancia Parcela 52», a blend is made each year with three forms of fermentation: in barrel, in wooden «tina» and in stainless steel tank.
The barrel fermentation keeps the wine with its fine lees for six months using the artisanal batonnage technique. In the «tina», the wine takes character with a very special sweet wood touch. And finally, the stainless steel tank fermentation provides it with «freshness». It is a very innovative wine due to its triple fermentation that becomes a «treat» to accompany great moments.
The 2016 harvest was characterized by several factors that favored the quality of this vintage, including a later harvest compared to other years, providing continuous and balanced ripening of the clusters. The earliest white varieties, such as Chardonnay and Moscatel, were picked at the end of August, finishing the harvest two months later with varieties like Cabernet Sauvignon or Petit Verdot. This slight delay was due to the presence of very favorable weather during the summer, with absence of rain and mild temperatures at the end of the cycle. This allowed optimal ripening of the clusters with healthy appearance and good quality. All this made it possible to harvest, in a selective, unhurried and risk-free way, each of the vineyard varieties. The high degree of balance between vegetation, harvest and winemaking has resulted in the production of wines of excellent quality.
