White Wine Pazo de San Mauro

This wine is made from 100% Albariño grapes at the Pazo de San Mauro winery located in Condado de Tea, the southernmost and sunniest area of the Rías Baixas Denomination, with an exceptional Atlantic-influenced microclimate characterized by mild temperatures and abundant rainfall, as well as the optimal sun hours needed for the grapes in Pazo de San Mauro’s vineyards to achieve fuller and earlier ripening. This allows us to obtain greater precision and quality in the production of our wines. Additionally, a special characteristic is the estate’s granitic soil, geologically ancient, which gives the wines their complex and mineral character. Hand harvesting is carried out, selecting the best grapes for our wines directly in the vineyard. Once the grapes arrive, they undergo low-temperature maceration for several hours to extract the maximum amount of aromatic compounds. For the following 15 days, the wine ferments in stainless steel tanks at 17-18ºC before stabilizing in isothermic vats. It has an alcohol content of 12.5% vol.
