The grapes are destemmed with minimal crushing, allowing the clusters to preserve their integrity and contribute their characteristic flavors and aromas.
Fermentation takes place at low temperatures for a minimum of 30 days in stainless steel tanks, which preserves the freshness and fruitiness of the wine. Once fermentation is complete, the Son Vich Expresión remains in contact with its lees for 5 months, without additives or artificial interventions. This aging on lees provides greater complexity and texture to the wine, enhancing its character and smoothness on the palate. Subsequently, the wine is lightly filtered and bottled, ready to be enjoyed in its fullness.
