Fermentation in concrete, where each variety is processed separately, preserving their unique characteristics. Final blending without malolactic fermentation in January, ensuring vibrant freshness in every sip.

6 months aging in stainless steel, which provides roundness and balances its natural acidity. All wines from this winery are minimal intervention, vegan and organic.
