El Grifo Vendimia de Invierno White Wine is a testament to the ingenuity and adaptability of viticulture on the island of Lanzarote. The grapes are collected in 18-20 kg boxes, ensuring their preservation and quality. The winemaking technique is equally unique, with fermentation carried out with whole clusters, without destemming. This singular technique extracts exceptional nuances from the grapes, including saline notes characteristic of the region. Once fermentation is complete, the wine is kept in the cellar sur lie to preserve its freshness and enrich it with fine lees, giving it greater complexity and structure. Subsequently, stabilization and filtration are carried out before bottling. Early pruning is a central element of this project, driving a new cycle in the vine to adapt to the island’s climate. This allows taking advantage of a period of the year with greater precipitation in Lanzarote, counteracting problems caused by climate change, such as water stress, resistance to phytosanitary products and increased alcohol content in wine.
