Arrayán debuted in the D.O Méntrida with this wine, a white made with the variety that gives it its name from old vines in Almorox (Toledo).
It is made by treading whole bunches in small tanks. Subsequently it macerates cold for two days. It is pressed and fermented in barrels. Arrayán wines seek the expression of the different terroirs and their typicity. From vineyard to winery all processes are carefully managed: organic cultivation, manual harvest, bunch selection, spontaneous fermentations of the grapes (without addition of oenological products) and aging adjusted to the needs of each variety; in order to obtain maximum purity and personality. The result is fine and elegant wines.
