It is crafted in a unique volcanic landscape, in the municipal area of the noble and cultural city of Almagro, with 3 months aging in barrels. A Sauvignon Blanc in the purest Bordeaux style of the variety, but with a special gunpowder touch, typical of volcanic island terroirs, which will soon become part of Spain’s most special and personal productions. Encomienda de Cervera: The Encomienda D Cervera estate is located in the heart of the Campo de Calatrava Volcanic Massif at an altitude between 750 and 850 meters above sea level, in the area of the noble and cultural city of Almagro, bordered by the Sierra de Arzollar, the Cañada Real Soriana, between valleys and mountains with high density of holm oaks and junipers, rosemary, thyme, etc., where you can distinguish the black soils of volcanic origin, the red ones (Almagre) which, according to some historians, give the city of Almagro its name, and the limestone and stony ones. All under the watchful eye of the Maar Volcano of Hoya de Cervera, declared a Natural Monument in 1999, and the calm waters of one of the main tributaries of the Guadiana river, the Jabalón river. The rugged topography, which forms its three rainfall basins, offers a peculiar microclimate, with cool nights that compensate for daytime sunshine. The soil selection was carried out through an exhaustive pedological study, to select from the volcanic, clay-limestone and stony soils existing on the estate, the most suitable for each variety.
