With deep respect for traditional viticulture, the harvest is carried out manually, in 16 kg boxes, carefully selecting each bunch. After destemming, the grapes are gently pressed and the must is transferred to 225-liter French oak barrels, where alcoholic fermentation takes place. This delicate phase gives way to a unique aging: 20% of the wine is transferred to demijohns, large glass containers that allow slow and delicate evolution; the remaining 80% remains in barrel with periodic batonnage, that is, gentle stirring of the lees that provides unctuousness, structure and volume to the wine. The result is a white wine full of nuances, where white fruit, floral touches and subtle minerality intertwine with a fresh, elegant and persistent palate. The Albillo Mayor variety shows all its potential here, and the aging on lees adds a depth that makes it unique in its category.
