The CIPMA II Marisol Rubio Barrel Fermented Wine is a dry white wine fermented and aged in barrel, made with 100% Pedro Ximénez grape variety. Fermentation in new oak barrels from Missouri forests. Aged 6 months in American oak barrels with weekly battonage. Vineyard: La Rizosa, Villanueva de Alcardete (Toledo). Terrain: General chalky-loam character with clay and sandy areas. Harvest: Manual in 15kg boxes / 1st week of October 2019. Monovarietal. Dry white wine made with 100% PX grapes grown in Toledo. During the 2019 campaign, the fruit successfully overcame significant weather adversities, in addition to the challenges of an extreme climate and chalky soil. A unique and pioneering product in Spain. Limited edition, numbered on the cork.
